The combination of Basil, sun-dried tomatoes and chorizo sausage, gives this a typical but unique mediterannean flavour.
Ingredients (Serves 4)
FOR SPAETZLE
2 cups plain flour
1 tsp. salt
2 eggs
approx. 1 cup water
FOR SALAD
200gm chopped ham or Chorizo
1/2 cup semi sun dried tomatoes
2 tbsp. chopped basil, chopped parsley
2 hard-boiled eggs, diced
1/4 cup herbed olives
1/2 cup marinated mushrooms, diced
1/2 cup chopped avocado
Balsamic vinegar,
6 heaped tablespoons Best Foods Whole Egg Mayonnaise
salt and pepper to taste
METHOD:
- In a large bowl combine flour, salt, eggs. Stir in sufficient water to make a soft dough and make Spaetzle according to basic recipe.
- Allow Spaetzle to cool a little before adding the salad ingredients.
- Mix mayonnaise, vinegar with a little water or natural yoghurt to thin. Then fold through spaetzle with diced salad ingredients and the ham/chorizo.
- Gently mix all together and let salad stand 1 hour for flavours to combine.
